At first glance, Mahalepi appears wonderfully simple. It is made from nisiaste, water, rose water, and sugar. Nisiaste is a fine powder produced from sun-dried corn kernels, which transforms during cooking into a smooth, custard-like pudding with a light, neutral taste.
